A delicious and quick dish with eggplant is baked slices. When the eggplant lets go of its juices, dry it thoroughly with a paper towel. Place it on a baking sheet and baking paper, drizzle it with olive oil. Then place a slice of tomato on each eggplant slice, add seasoning and sprinkle with mozzarella. Bake for 20 minutes at 180 degrees. Serve with fresh basil leaves. Enjoy!
You will also make a perfect sandwich paste from eggplant, great for breakfast or dinner. To make the paste you’ll need one onion, one eggplant, two cloves of garlic, a tablespoon of Tahini paste, a few sundried tomatoes in brine, a tablespoon of tomato oil and salt and pepper to taste. Finely slice the onion and fry it in the tomato oil. Wash and dice the eggplant, then salt and leave it for 20 minutes. After this time, drain the eggplant and put all the ingredients into a blender. Blend thoroughly until you have a smooth paste. Serve with your favorite bread.
You can also prepare fries from eggplant. All you need to do is prepare the eggplant (salt it and then dry it) and cut it into rings. In one bowl, whisk 2 tablespoons of flour with 150 ml of milk, and in another bowl mix together flaxseed, sesame seeds, bread crumbs and Parmesan cheese grated on a fine-mesh grater. Dip the eggplant in the batter and then in the coating and fry in hot oil. Drain the finished disks from excess fat on a paper towel before serving.
Another quick dish with eggplant is a salad. To make it, prepare the eggplant and then grill its slices thoroughly on each side. Once they are lightly toasted, remove the eggplant from the grill. You will need: coconut oil, two eggplants, 300 g dark chocolate, 3 eggs and one yolk, 200 g date syrup, 1 tsp vanilla extract, 60 g cocoa, 60 g almond flour, 2 teaspoons baking powder, ¼ teaspoon salt. Preheat the oven to 200 degrees, line a flat baking sheet and the bottom of a cake pan with baking paper, and brush the sides of the pan with coconut oil. Wash and dry the eggplants. Burn them gently over a gas burner. Prick them with a knife and place them on the baking sheet. Bake for about 40-60 minutes, until they are soft. Peel and blend the roasted eggplants, add the remaining ingredients and mix thoroughly. Pour the mixture into a cake pan and bake for 30 minutes at 180 degrees.
